Mustard seeds are the small rounds seeds that come from a variety of mustard plants. They are usually colored yellow, white, and black. Mustard seed is an important spice used in the food industry and can come from three different types of plants: black mustard, brown mustard, or white/yellow mustard. When the seeds from the mustard plant are ground down and mixed with water, vinegar, or other liquids, it creates the yellow condiment that is known as prepared mustard.
Mustard seeds are known by many different names across the world. In Hindi, Urdu, and Punjabi they are known as sarson. In Bengali they are known as shorshe. It is also commonly used in Pakistan, Northern India, Nepal, and Bangladesh. Mustard seed in these regions are usually prepared by roasting them until they pop. They are also planted to grow saag (greens), a common dish in India where the greens are stir-fried.
In Maharashtra, mustard seed is referred to as mohari, and its oil is used for body massages during extreme winters to help keep the body warm. In Bengali cuisine, both the oil and the seeds are used for cooking and as ingredients to add spice to certain dishes such as fish.
Mustard seeds need a cold atmosphere and moist soil to germinate. If they are grown in the proper conditions they usually are about 8 to 10 days to germinate and then later grow into shrubs. Mustard seed usually grows well in temperate regions. The world’s main producers of mustard seeds are India, Pakistan, Canada, Nepal, Hungary, Great Britain, and the US. Typically, the brown and black mustard seeds have higher yields than the yellow variety. Nutritionally, mustard seeds are a rich source of oil and protein.
