Chocolate and chocolate powder comes from cacao beans and can benefit from size reducing, material handling, and milling. Chocolate solids, which include chocolate powder, are the mixture of substances that remain after cocoa butter is extracted from the cacao beans. The end product is then usually referred to as cocoa powder. Chocolate powder is similar but maintains a higher amount of the cocoa butter than the alternative. Cocoa solids are the main ingredient that makes up almost all chocolate products. Cocoa butter is what makes up almost half the weight of cacao beans and gives typical chocolate products its melting properties. Any chocolate recipe requires cocoa butter to cocoa liquor. This leads to a surplus of cocoa solids that include cocoa powder and chocolate powder, making the product very cheap.
Cocoa powder, and in turn, chocolate powder, contains many minerals. This includes calcium, copper, magnesium, phosphorus, potassium, sodium, and zinc. There is an abundance of these minerals in cocoa and chocolate powder that aren’t as abundant in cocoa butter or cocoa liquor.
Chocolate is one of the most popular flavors in the world, but many are unaware of the process of creating chocolate, chocolate powder, cocoa powder, and the numerous other products that come from processing the cacao bean. Quality chocolate powder and cocoa powder must be easily dissolved and have a rich flavor, so the cacao beans are carefully selected for this purpose.
After the cacao beans have been roasted and removed from their shells, they are ground down and heated to become cocoa liquor. When this liquor cools an hardens, it then becomes unsweetened chocolate.
When some of the fat is removed, the cocoa liquid then transforms into cocoa butter. The remaining cocoa solids are then ground down to create cocoa powder and chocolate powder depending on the amount of cocoa butter that remains. Chocolate powder contains more cocoa butter than cocoa powder.
